Unlock harder mode (EX):
Finish the game once then save.
Load back the cleared saved game file, after speak with the old man.

Unlock different outfits:
Finish the game once then save. Load back the cleared saved game file,
but do not enter EX mode yet. Speak with the woman and agree to help her.
You have to find different items in the EX mode stages. Take them back
to the woman to get a new outfits. Every character has 3 different outfits
that can be found, based on Street Fighter and Vampire Savior.
To unlock the last costume for every character, beat the Boss on
stage 100 in EX mode.
